This is a colorful salad rich with antioxidants your body needs during winter. It is so rich and has a winter flavorMakes 1 medium bowl.

Salad ingredients

1 cup of shredded kale
1/2 cup of carrot strips
1 cup of cabbage mix: white & purple
1/4 cup of red pepper strips - optional
1 tsp green onions
1 tbsp coriander leaves
Extras to garnish: apple allumettes & roasted crushed peanuts

Dressing ingredients

1 tbsp peanut butter, smooth
1 tbsp rice vinegar
1 tsp Podor peanut oil
1 tsp soy sauce/tamari
1 tsp grated ginger
1/2 tsp honey
Pinch of salt

Instructions

In a bowl, mix all the dressing’s ingredients until smooth. Mix it with the vegetables and garnish with peanuts and apples. Enjoy it with chicken, shrimp or as is!!
