Vegan meal with Clara and Chef Karim Audi for World Vegan Day
Yesterday was World vegan Day!
For this occasion we had the honor of preparing a Pumpkin Vegan Couscous with our ingredients with @Claralicious at @Nicolas.audi' kitchen
1 handful coriander
1 handful mint
1/4 Cup olive oil
1 pumpkin (300g)
2 TBSP cumin
1 TSP Chili paste
Salt + pepper to taste
In a large skillet, sauté the vegetables in oil for 5-6 minutes or until vegetables are crisp-tender.
Add 2 cups of water, reduce the heat and let simmer for 30 min then add the chili paste and boil again for a couple of minutes.
Prepare the couscous on the side and add to it cumin, salt and pepper.
Combine both and bon appetit!
