Truffles Holiday Recipe by Tania Koujou

This is an easy raw truffle recipe I made when my friend came over and she enjoyed it and took this lovely snap! You just need one food processor and those ingredients. Merry Christmas everyone!
- 6 medjool dates
- 3/4 cup walnuts
- 2 to 3 tbsp cacao powder
- 3 to 4 tbsp maple syrup
- 2 tsp granulated coffee
- Pinch of salt
- Extra cacao for rolling
In a food processor, blitz the walnuts until fine. Add the dates and mix until everything is well incorporated. Then, add the rest of the ingredients for a final mix. You need to get a smooth thick spread. Put it in fridge for 1 hour then with a tablespoon, take a part of the spread, roll it between your hands to form a ball and then into the cacao. Let the truffle balls sit in the fridge for 4 hours until firm.
- Use only medjool since it is the juiciest and you'll need it for a creamy smooth truffle
- If the mix is not 100% smooth, add 1 tbsp hot water while the ingredients are mixing
- If you like a strong cacao flavor, then go for 3 tbsp cacao powder and 4 tbsp maple syrup
