UTENSILS
You will need:
- Food Processor
- Blender
- Tray and Parchment Paper
You can find most of the ingredients listed below on Mint Basil Market. Half a recipe was made, double the ingredients for a big carrot cake.
INGREDIENTS
Cake:
- 1.5 Cup Grated Raw Carrots
- 1/4 Cup Almond Meal
- 1/4 Cup Coconut Flour
- 1/2 Cup Shredded Coconut
- 1/4 Cup Sultanas (Raisins)
- 1/2 Cup Medjool Dates
- 1-2 tbsp. Spices of Choice (Ginger, Turmeric, Pumpkin Spice, Nutmeg, Cinnamon, etc.)
Coconut or Cashew Frosting:
- 1 Cup Fresh Coconut Meat
- 1/2 Cup Coconut Sugar
- 1 tbsp. Psyllium Husk Powder
- 1 tbsp. Lemon Juice
- Pink of Vanilla Bean
- Dash Pink Salt
- 1/2 Cup Coconut Oil Melted
- Few Dashes Water (if needed to thin out the frosting while blending)
DIRECTIONS
Starting with the frosting because it needs to be set in the fridge, Blend all in a high-speed blender then add melted coconut oil last (if using cashews or macadamia nuts soak overnight first).
Set frosting in the fridge if you want to pipe it on top of carrot cake or you can pour it straight onto carrot cake then set them together if in a rush.
For the cake:
Pulse all the cake ingredients together in a food processor adding the dates while the blade is going until all is mush.
Line a tray with parchment paper and empty your food processor into the tray while evenly spreading the cake.
Decorating:
Pour the frosting over the cake after it has set for a little while in the fridge, If you’re in a hurry, you can pour it on top and set both later in the fridge.
