Chocolate Sweet Potato Cupcakes Recipe

Preparation Time: 20min
Yield: 12 cupcakes

INGREDIENTS:

3 Tbsp Coconut flour
2 Tbsp Cacao powder
½ Tsp Bicarbonate
½ Tsp Cinnamon
1 cup Baked mashed sweet potato
3 eggs
¼ cup Coconut oil
1/3 cup Carob molasses
1 Tsp Vanilla

DIRECTIONS
1. Mix all dry ingredients in a bowl
2. In the bowl of a stand mixer combine sweet potato
with wet ingredients and mix until fluffy then add dry
ingredients gradually until a batter forms
3. Place in cupcake molds and bake at 150-160C in a
preheated oven for 10-15 min
