Banana Goji Grain-Free Porridge
If you’re looking for a quick delicious and heartwarming breakfast, this one is for you! Plant-based and Paleo friendly, you’ll surely want to have it on cold mornings and even try your own twist of it.
¼ cup almonds
¼ cup coconut shreds
2 tablespoons hemp seeds
1.5 tablespoon chia seeds
1 tablespoon ground flax seeds
1 tablespoon goji
1 small ripe banana
¾ cup unsweetened almond mylk
½ teaspoon maple syrup or honey
½ teaspoon cinnamon
pinch of salt
½ cup berries of choice
For the base, add all ingredients except for the banana in a blender and blend on high until everything turns into flour. Next transfer the mix into a heat-resistant bowl. On a separate plate, mash the ripe banana then add it to the bowl. Add banana to the bowl and mix it with everything else until well incorporated.
For the mylk, heat the almond mylk in a pan on low-medium heat. Add the maple/honey, cinnamon and salt. Stir for 5 mins until well combined and warm.
Pour the hot mylk into the bowl and mix everything up until you get a porridge consistency.
I love adding berries to it for their antioxidants and amazing taste.
