Banana bread is one of those classic comfort food recipes that fills the whole house with warmth and makes everything better. Health coach Shani Mohfat has prepared for you the best moist and tastiest banana bread you will find! It contains no sugar or butter!
This healthy banana bread is the perfect recipe to try out because not only is it simple and easy to make (basically a one-bowl recipe!), but it’s also nourishing and so delicious. Being a one-bowl recipe, you can get your kids to help you prepare it. Mix a few nuts or chocolate chips into the batter to make banana nut bread or chocolate chip banana bread. You can also add blueberries.
Perfect for breakfast with your coffee, as a mid-afternoon snack, or as a dessert, it will not disappoint. Let’s bake!
You will need:
- Bread baking mold lined with butter paper
You can find all the ingredients listed below on Mint Basil Market.
- 1 ½ cup of Spelt flour or any flour that suits you
- 1 tablespoon of chia seeds and 3 tablespoons of ground flax seeds mixed with ⅓ cup of plant-based milk
- 3 ripe mashed bananas with 1 cut banana on the side for the topping
- 2 teaspoons of baking powder
- ½ teaspoon of baking soda
- 2 teaspoons of cinnamon
- Ginger, turmeric, nutmeg, and vanilla to taste
- 1 tablespoon of coconut oil
- 3 tablespoons of maple syrup
You can omit the maple syrup if your bananas are really sweet.
This recipe is incredibly easy to make. So let’s get started!
Sift the flour to make it nice and fluffy. Depending on your oven, turn it to 180 or 200 degrees.
Grab a bowl and start by adding all the dry ingredients. Add the spices first, then mix well.
Mix your vegan egg (1 tablespoon of chia seeds and 3 tablespoons of ground flax seeds mixed with ⅓ cup of plant-based milk) into the mashed bananas. Mix well. Add to your dry ingredients when done and mix well.
Add the maple syrup, only if you want to, and the coconut oil, then stir.
Drop your ingredients into the bread baking mold lined with parchment paper, flatten it out and decorate with the sliced banana. Sprinkle some cinnamon on top and some coconut sugar.
Put the mold into the oven and check back on it in an hour or 45 mins depending on your oven.
That’s all there is to it! This banana bread should be kept well-covered in foil or plastic wrap at room temperature for up to 3 days, then transfer to the fridge or freezer.
